My Big Fat Greek Wine Adventure – Part 2: Assyrtiko, the Soul of Santorini

If you've ever visited Santorini, you know it's a place that stays with you. The whitewashed villages, dramatic cliffs, and breathtaking Aegean sunsets are unforgettable. But for wine lovers, one of the island's greatest treasures is Assyrtiko, Greece's most celebrated white grape.
During my travels through Greece, I quickly learned that Santorini is home to one of the world's most distinctive wine regions. Covered in volcanic soils and battered by strong winds, the island seems like an unlikely place to grow grapes. Yet these harsh conditions have helped create a grape with remarkable character.
Assyrtiko is known for doing something few white grapes can do; maintaining vibrant acidity even in intense heat. The result is a wine that is crisp, refreshing, and beautifully structured. In the glass, expect notes of citrus, green apple, and fresh herbs, often accompanied by a striking mineral quality that reflects Santorini's volcanic terroir.
One of the most fascinating sights on the island is the traditional kouloura training system. Instead of growing upward on trellises, the vines are woven into low basket-shaped forms that protect the grapes from the relentless wind and sun. Some of these vines are centuries old, with roots that have survived generation after generation. It takes a lot love and skilled labor to nurse these vines in this way.
Assyrtiko is also the principal grape behind Vinsanto, one of Greece's most treasured dessert wines. Made from sun-dried grapes, Vinsanto offers rich flavors of honey, dried apricot, figs, and caramel. What makes it so special is that the grape's naturally high acidity balances the sweetness, creating a wine that is both rich and elegant. I can tell you that it is a extremely nice dessert wine. Try it if you get the chance.
For food pairings, Assyrtiko shines alongside seafood, grilled fish, oysters, calamari, feta cheese, and dishes featuring bright Mediterranean flavors. Its freshness and structure make it one of the most versatile white wines at the table.
What makes Assyrtiko truly memorable is its story. This is a grape that thrives where many others would struggle, transforming adversity into something exceptional. That spirit feels especially familiar at Blū Phoenix. Much like the phoenix rising stronger from challenge, Assyrtiko flourishes in one of the world's most demanding environments, producing wines of beauty, character, and resilience.
